Pineapple Tepache ("teh-pah-cheh")

Tepache is a super refreshing, slightly fermented drink made from pineapple peels and sugar. Make your own at home with this simple recipe.
INGREDIENTS
large pineapple (quartered and sliced, or skins of 3 pineapples)
200g cane sugar (10% sugar to water ratio)
2 litres water
5 cloves
1 cinnamon stick

METHOD
- Place the pineapple, sugar, spices and water in to a Kilner jar leaving 10% head space.
- Ferment at room temperature for approximately 5 days swirling the mix to avoid any build up of residue.
- Strain off the fruit when you are happy with the flavour profile (leaving the fruit in will eventually turn the tepache into vinegar).
- Bottle and store in the fridge for up to 2 months.
- Serve chilled over ice.
