Pineapple Tepache ("teh-pah-cheh")

Tepache is a super refreshing, slightly fermented drink made from pineapple peels and sugar. Make your own at home with this simple recipe. 

INGREDIENTS

large pineapple (quartered and sliced, or skins of 3 pineapples)

200g cane sugar (10% sugar to water ratio)

2 litres water

5 cloves

1 cinnamon stick

METHOD

  1. Place the pineapple, sugar, spices and water in to a Kilner jar leaving 10% head space.
  2. Ferment at room temperature for approximately 5 days swirling the mix to avoid any build up of residue.
  3. Strain off the fruit when you are happy with the flavour profile (leaving the fruit in will eventually turn the tepache into vinegar).
  4. Bottle and store in the fridge for up to 2 months.
  5. Serve chilled over ice.
